Proxy Foods AI brings AI-powered formulation into MISTA ecosystem

The Washington, DC-based company’s technology will be incorporated into selected MISTA programs and member projects, including the MISTA Growth Hack in October 2026. The collaboration is intended to give participating companies another tool for developing and reformulating products while accounting for factors including nutrition, regulation, cost, sensory performance and manufacturing requirements.

Founded by Givaudan in 2018, MISTA operates from its Innovation Center in San Francisco and brings together more than 30 member companies alongside startups, brands, advisors and food-system specialists. Its programs are designed around collaborative development, with companies working together on shared food industry challenges and translating new ingredients and technologies into product concepts.

Proxy Foods AI has developed its platform specifically for food and beverage R&D teams, with applications spanning initial product development and reformulation. The technology is designed to predict sensory, processing and functional outcomes before physical benchtop trials take place.

Within MISTA, the platform will be used to help teams explore potential solutions to development challenges and identify possible formulations before moving into physical testing. It can also consider several commercial constraints simultaneously, including ingredient cost, nutritional targets, production requirements and sensory characteristics.

Proxy Foods AI said customers using its technology have recorded reductions of up to 90% in benchtop formulation time, improvements of up to 40% in sensory scores and cost-of-goods reductions of 2-10% on reformulation projects.

The partnership comes as food manufacturers face pressure to shorten product development cycles while meeting increasingly complex requirements around nutrition, ingredient declarations, manufacturing economics and consumer expectations.

Rather than replacing physical development work, the platform is intended to help teams narrow potential options before benchtop testing and make formulation decisions earlier in the development process.

One of the first opportunities to put the technology to work will come through MISTA’s annual Growth Hack. The program brings multidisciplinary teams together to address consumer-facing food challenges and develop product concepts using technologies and ingredients from across the MISTA network.

Proxy Foods AI’s platform will be incorporated into the 2026 program, with participating teams able to use it during the ideation and formulation process.

The resulting work is due to be showcased at the MISTA Growth Hack & Demo Day on October 22, where multidisciplinary teams will present innovations developed around real-world consumer challenges, with a focus on nutrition, functional benefits and taste.

Beyond Growth Hack, Proxy Foods AI said its technology is expected to be used across additional MISTA projects and innovation activities during the year.

Proxy Foods AI works with consumer packaged goods, foodservice and ingredient companies, providing tools intended to support development from initial concept through commercialization. MISTA’s wider network spans areas including plant-based foods, biotechnology and fermentation, digital innovation and nutrition.
