EVERY’s precision-fermented egg white reaches home kitchens as Healthier Comforts launches consumer baking ingredient

A precision-fermented egg white protein developed by San Francisco food biotechnology company The EVERY Company has reached home kitchens for the first time through a new consumer product launched by Healthier Comforts.

The direct-to-consumer pantry brand has introduced Animal-Free Egg White Protein Powder, a baking ingredient made using EVERY’s flagship protein ingredient, OvoPro. The product is now available through the Healthier Comforts website and Amazon in an 8oz resealable bag designed for at-home cooking and baking.

The launch marks the first time EVERY’s egg white protein has been sold in a retail-ready format aimed directly at consumers. Until now, the company’s precision-fermented proteins have been supplied primarily to food and beverage manufacturers in bulk quantities.

The collaboration between the two companies began when Healthier Comforts founder Aaron Vander Heyden encountered EVERY’s ingredients at the IFT First food science event in Chicago.

Vander Heyden identified an opportunity to address what he described as a longstanding gap for vegan consumers seeking egg alternatives that perform reliably in demanding baking applications.

“When we came across EVERY and their ingredients at IFT First in Chicago, we immediately realized that there was a huge opportunity to meet an unmet need for vegan consumers,” Vander Heyden said. “The introduction of this product has even exceeded our expectations and we’re looking forward to continuing to find new ways to bring this product to our consumers.”

Egg whites play a critical functional role in many baking applications, providing foaming, binding and structural properties essential for products such as meringues, macarons and angel food cakes. While plant-based egg substitutes have expanded in recent years, replicating the unique performance of egg whites in these applications has remained a challenge.

EVERY’s OvoPro ingredient, produced using precision fermentation, is designed to replicate the functionality of egg white protein without the use of chickens. The process involves programming microorganisms to produce ovalbumin, the primary protein found in egg whites, before extracting and purifying the protein for use in food products.

By supplying this ingredient to Healthier Comforts in a consumer-ready format, the partnership has opened the technology to a new segment of users.

The product initially soft-launched on the Healthier Comforts website in December 2025. According to the company, it quickly attracted attention within online vegan communities, particularly on Reddit, where users discussed its potential to recreate recipes that traditionally rely on egg whites.

Early demand reportedly exceeded expectations, with the product selling out shortly after its initial release.

Customers noted that the ingredient enabled them to prepare baked goods that had previously been difficult to replicate using plant-based alternatives, including angel food cake and other egg-white-dependent desserts.

For EVERY, the launch reflects an expansion of its ingredient strategy beyond large-scale industrial customers.

Founded in San Francisco, EVERY focuses on producing functional food proteins using precision fermentation. The company programs microorganisms to produce proteins traditionally sourced from animals, enabling food manufacturers to access ingredients with familiar performance characteristics without relying on livestock.

OvoPro is designed to replicate the properties of ovalbumin, the main protein in egg whites responsible for their foaming and binding capabilities.

EVERY also produces another protein ingredient known as OvoBoost, a highly soluble protein designed for use in beverages and other fortified products.

According to the company, these ingredients are already used in products sold through major retailers including Walmart, Target and Amazon, as well as by a growing number of regional bakeries.

The partnership with Healthier Comforts highlights the expanding range of applications for precision-fermented proteins as companies seek alternatives to conventional animal-derived ingredients.

Egg products in particular have attracted interest from food manufacturers and ingredient developers, partly due to price volatility and supply chain disruptions affecting the global egg market in recent years.

Precision fermentation technologies allow companies to produce proteins with identical molecular structures to those found in animal products while operating in controlled fermentation systems.

These systems can offer greater supply stability and avoid many of the animal welfare and environmental concerns associated with conventional production.

EVERY indicated that expanding production capacity will be a priority during 2026 as the company works with additional customers across multiple food categories.

The company also said it aims to help manufacturers meet corporate commitments to cage-free egg sourcing while providing more predictable ingredient supply.

For Healthier Comforts, the launch represents an opportunity to introduce biotechnology-derived ingredients to everyday home cooking.

The brand focuses on shelf-stable powdered ingredients designed to simplify meal preparation and baking.

By packaging the precision-fermented protein in a consumer-friendly format, the company aims to make a previously specialized ingredient accessible to home cooks experimenting with plant-based and vegan recipes.
