Barry Callebaut launches cocoa fermentation platform for consistent chocolate flavors

November 2, 2026

Barry Callebaut has unveiled Flavourcode, a proprietary cocoa fermentation platform designed to develop distinctive natural chocolate flavors without added flavorings and reproduce them consistently across batches, with an initial European rollout scheduled for November 2026.

• Barry Callebaut unveiled a cocoa fermentation platform designed to deliver distinctive natural flavors consistently.
• Its first product targets chocolatiers, chefs and artisans.
• Food manufacturing applications are under development.

Announced on October 28, the platform addresses a challenge associated with cocoa as an agricultural raw material: its characteristics vary between origins, harvests and seasons. Barry Callebaut said its approach guides fermentation to develop defined flavor profiles within the bean, combining greater taste intensity with the consistency customers need to reproduce finished products.

“Cocoa is an extraordinarily complex raw material, and understanding how to work and innovate with that complexity is a core part of Barry Callebaut’s expertise,” said Hein Schumacher, CEO of Barry Callebaut.

“With Flavourcode™, we are putting that expertise to work for our customers, opening up unexplored natural flavors within the bean, driving taste intensity, while delivering consistency and workability.”

The company described the platform as the result of many years of research into cocoa fermentation. Its launch announcement focused on sensory characteristics and application opportunities, without detailing the fermentation organisms, operating conditions or production volumes involved.

The first commercial product, Callebaut Flavourcode 01, was developed for chocolatiers, chefs and artisans working across pastry, confectionery, ice cream and plated desserts.

According to Barry Callebaut, its flavor profile opens with tropical fruit notes, including passion fruit, pineapple, mango and ripe banana, followed by dried-fruit characteristics and a cocoa finish. The company said these characteristics are developed through its fermentation approach without added flavorings.

For professional users, the proposition also concerns repeatability. A defined sensory profile gives chefs a consistent ingredient around which to develop recipes, helping them deliver the same intended taste experience across successive batches.

“For chocolatiers and artisans, a distinctive flavor is only valuable if it can be relied on in practice,” said Ramon Morató, Head of the Barry Callebaut Chocolate Academy Centre.

“That gives us more freedom to create – and ensures a taste consistency for consumers batch after batch.”

Barry Callebaut linked the development to research it conducted across 24 markets, which it said indicated consumer interest in distinctive, complex taste experiences. The company also identified demand from brands and manufacturers for ingredients that help differentiate products through flavor.

The innovation was unveiled in Antwerp alongside the World Chocolate Masters 2026 final and the Callebaut Innovation Summit, bringing together culinary professionals, researchers and industry representatives.

While the first product concentrates on professional kitchens, Barry Callebaut is exploring how the platform could be developed for food manufacturing. Potential directions include Dark 70%, Dark 54% and Milk profiles.

That work will examine how defined cocoa flavor profiles perform across different applications and production environments. The company said development with food manufacturers would address consistency, technical performance and the scale required for industrial use.

The announcement therefore sets out two stages of development: an initial commercial product for chefs and artisans, followed by work to establish additional profiles and manufacturing applications. It did not specify launch dates for the potential dark and milk variants.

“Flavourcode 01 is just the beginning,” Schumacher said. “We see significant potential to build this into a broader innovation platform across Gourmet and Food Manufacturing.”

The launch adds another route to chocolate ingredient development alongside Barry Callebaut’s existing activity in cocoa alternatives. In November 2025, the company
announced a long-term commercial partnership with Planet A Foods, the developer of the cocoa-free ChoViva ingredient. That agreement expanded its options for customers seeking chocolate-like products made from alternative raw materials.

Flavourcode applies fermentation expertise to cocoa itself, with the aim of creating additional sensory possibilities from the bean while retaining a reproducible profile.

Barry Callebaut said the development supports its Focus for Growth action plan, which concentrates innovation on differentiated, higher-value opportunities. The platform will sit alongside its existing portfolio of chocolate, compounds, fillings, inclusions and specialty ingredients.

The company scheduled European availability for artisans, culinary professionals and food manufacturers from November 2026, with a global rollout to follow. Additional taste profiles are planned, although timings and the sequence of future market launches were not disclosed.
