AI, fermentation and GLP-1: Cargill outlines its future food priorities

Cargill has pinpointed artificial intelligence, fermentation, personalized protein and more resilient ingredients as some of the technologies and consumer trends likely to shape the future of food, according to its 2026 annual report.

Cargill disclosed plans for an AI-powered hypothesis engine designed to reduce early-stage scientific work that previously took months to a matter of hours.
The company identified protein personalization and GLP-1 use among major consumer trends, estimating the drugs’ net impact on US calorie consumption at 1-2%.
Cargill highlighted fermentation, cocoa alternatives and precision nutrition as technologies offering new opportunities in ingredient production, product development and agricultural resilience.

The US food and agriculture company, which reported US$164 billion in revenue for fiscal 2026, used the report to outline how changing demographics, health priorities, technology and supply-chain pressures are influencing its investment and innovation priorities.

Florian Schattenmann, CTO at Cargill, said the requirements for growth in food and agriculture were changing. “For decades, the defining challenge of food and agriculture was producing more,” he wrote following publication of the report. “Today, it’s much more about moving smarter, responding faster, and building stronger connections across a food system under pressure.”

Schattenmann said consumers were changing how they eat, shop and think about food faster than ever, while new technologies could help companies move more quickly from insight to action.

“Science and deep expertise help us solve the right problems,” he added. “And strong partnerships help turn great ideas into solutions that can reach tables and shelves at the scale we need.”

Among the clearest indications of where that work is heading is Cargill’s expanding use of AI in scientific research and food product development.

The company said it was building an AI-powered hypothesis engine capable of turning broad scientific challenges into structured hypotheses, research pathways and experimental designs. Once operational, Cargill expects work that previously took months to be completed in hours, allowing scientists to investigate more ideas while shortening the route from data to insight and action.

AI is already being used elsewhere in the business to formulate products and accelerate their development, according to the report. Cargill also highlighted generative AI tools including Ask Emma and Taste Tinker, which help its teams develop and refine product concepts faster.

The technology sits alongside fermentation in Cargill’s emerging innovation toolkit. The company said advances in fermentation were opening up scalable ingredient possibilities that could improve resilience without sacrificing taste or performance.

It pointed to EverSweet as an established example. Following more than 300,000 hours of stevia research, Cargill used precision fermentation to produce the zero-calorie sweetener while requiring fewer natural resources than conventional production.

Consumer health trends are shaping another part of the strategy, with Cargill identifying 'protein personalization', GLP-1 drugs and evolving health priorities among the developments influencing global appetites.

Its assessment of GLP-1s suggests the company is looking beyond their effect on total food consumption. Cargill said 15% of US adults had used a GLP-1, but inconsistent use meant the net macro impact on calorie consumption was around 1-2%.

More important for food companies, it argued, is the effect on what consumers choose to eat, including demand for protein-forward and health-oriented products. Cargill said tracking such trends was helping determine where it and its customers invested in innovation.

Supply-chain volatility is creating a different opportunity for novel ingredients. Cargill highlighted NextCoa, its cocoa-free confectionery alternative developed with Voyage Foods, as part of its response to volatility in global cocoa markets.

Rather than presenting the technology solely as a sustainability proposition, Cargill emphasized sourcing flexibility and resilience. NextCoa was developed to provide a chocolate-like taste experience without cocoa, giving manufacturers another formulation option alongside the company’s conventional chocolate portfolio.

Precision nutrition also featured prominently, particularly in Cargill’s animal nutrition operations.

The company said it was combining microbiome science, animal health expertise and real-time data to improve feed decisions. Technologies highlighted included MaxiNIR MAX, which uses near-infrared light to analyze ingredients during feed production, and REVEAL Layers, which monitors the body composition of laying hens to support diet optimization and long-term egg production.

Cargill is also expanding the physical capacity behind this strategy. Upgrades to its micronutrition facility in Engerwitzdorf, Austria, are being accompanied by construction of a dairy feed plant in Punjab, India, with up to 400,000 metric tons of production capacity.

Taken together, the report points to a food innovation strategy in which faster R&D, fermentation and AI sit alongside changing nutritional priorities and technologies designed to reduce exposure to volatile agricultural commodities.

Cargill said the combination of consumer insights, science, technology and ingredient expertise was intended to help customers shorten innovation cycles and respond more quickly to changing demand.
