Pureture collaborates with Kangwon National University to drive innovation in alternative proteins

November 19, 2024

Pureture, a biotechnology company known for its Non-GMO alternative casein proteins, has partnered with Kangwon National University in South Korea to establish the Alternative Protein Research Center. This collaboration seeks to accelerate the development of high-functionality, sustainable proteins derived from yeast, addressing growing demands in the global alternative protein market.

The research center will focus on enhancing the production of Non-GMO yeast-based proteins that replicate the key functionalities of dairy casein, including emulsification, texture, and flavor. These proteins offer significant advantages for the alternative dairy industry, such as improved nutritional efficiency and quality. By refining yeast cultivation and fermentation technologies, the center aims to optimize the production process for scalability.

Kangwon National University will play a pivotal role by identifying and analyzing new wild yeast strains, providing critical foundational research. Pureture will apply this data to refine its technologies, ensuring the production of high-value functional components. Additionally, the partnership prioritizes scientific validation of the health benefits of yeast-fermented proteins and adherence to international regulatory standards, bolstering consumer trust.

The center will integrate upcycling technologies into its research efforts, utilizing byproducts such as whey and cane molasses to improve resource efficiency and reduce carbon emissions by over 30%. This approach aligns with Pureture’s commitment to sustainability by transforming waste into valuable resources.

Pureture’s CEO, Rudy Yoo, emphasized the significance of the collaboration, stating, “This partnership is a critical milestone in overcoming technological barriers in the alternative protein market. By advancing upcycling technologies and developing superior yeast-based proteins, we aim to meet global consumer demands with sustainable, nutrient-rich solutions.” Yoo further highlighted Pureture’s dedication to innovation, stating, “We will continue to invest in differentiated solutions utilizing cutting-edge yeast strains to reshape the future of food.”
