Demolish Foods has unveiled its latest innovation, the Gen4 commercial platform, designed to produce high-fidelity plant-based whole cuts. The launch marks a significant step forward in alternative proteins, addressing a market gap that has long challenged the industry.
While plant-based meat products have primarily focused on ground and shredded formats, whole cuts remain largely untapped. With poultry and meat supply chains facing disruptions from bird flu, climate change, and shifting trade agreements, the demand for high-quality whole-cut alternatives has grown. Demolish Foods aims to provide a viable solution that goes beyond incremental improvements, instead delivering a product that closely mirrors conventional meat in structure and sensory experience.
The Gen4 platform builds on the foundation of the company’s previous iteration, Gen3, which was recognized for its ability to replicate meat’s complex structural hierarchy—from microscopic muscle fibers to full-sized cuts. Gen4 introduces greater precision in replicating muscle texture, improving both commercial viability and manufacturing scalability. According to the company, the platform is the first to successfully recreate all perceptible components of conventional meat, making it indistinguishable to many consumers in both appearance and mouthfeel.
One of the platform’s key advancements is its ability to simulate the natural variations found in conventional animal cuts. Gen4 can engineer both chewy and tender sections within a single piece of meat, allowing for a more realistic texture. Additionally, the technology enables the fusion of multiple muscle structures, mimicking anatomical features such as the major and minor pectoral muscles of a chicken breast. Another refinement is the accurate recreation of sustained juiciness, ensuring consistency from the first to the last chew.
The company’s flagship plant-based chicken breast, produced using the Gen4 platform, is formulated with just eight clean-label ingredients. It is gluten-free, non-GMO, and designed to match conventional chicken in protein, fat, sodium, and caloric content. The platform is fully certified for commercial manufacturing, sale, and export, offering both chilled and frozen product formats.
From an operational standpoint, Gen4 introduces several efficiencies over its predecessor. The company reports a sixfold increase in production throughput, a 35% reduction in operational costs, and improved supply chain resilience through multi-vendor ingredient flexibility. These enhancements enable cost-optimized formulations while maintaining product quality.
